Niçoise salad

a French classic, intertwines tuna, eggs, green beans, tomatoes, olives, potatoes, and lettuce, kissed by Colli Siciliani olive oil, a Mediterranean ode on every refreshing forkful.
Ingredients:
2 cups mixed salad greens
200g cherry tomatoes, halved
200g green beans, blanched and chopped
1 red onion, thinly sliced
4 hard-boiled eggs, halved
200g canned tuna, drained
100g Niçoise olives
4-6 anchovy fillets (optional)
Fresh parsley, chopped (for garnish)
Colli Siciliani extra virgin olive oil
Red wine vinegar (optional)
Salt and pepper to taste
Instructions:
Begin by arranging the mixed salad greens on a large serving platter.
Place the halved cherry tomatoes, blanched green beans, and thinly sliced red onion over the greens.
Arrange the halved hard-boiled eggs and canned tuna on top of the salad.
Scatter Niçoise olives and anchovy fillets (if using) over the salad.
Sprinkle fresh chopped parsley over the salad for added freshness.
Drizzle Colli Siciliani extra virgin olive oil generously over the salad as the primary dressing. Add a splash of red wine vinegar if desired for extra tanginess.
Season the salad with salt and pepper according to taste.
Serve the Niçoise salad immediately, allowing the vibrant flavors to shine, enhanced by the richness of Colli Siciliani extra virgin olive oil.
