Oil and Lemon Biscuits

Delicate,fragant biscuits made with olive oil, lemon and almonds.

Ingredients:

• 2 cups all-purpose flour

• 1/2 cup granulated sugar

• 1/2 cup Colli Siciliani olive oil

• Zest of 2 lemons

• 2 tablespoons freshly squeezed lemon juice

• 1 teaspoon baking powder

• 1/4 teaspoon salt

• Powdered sugar for dusting (optional)

Instructions:

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a mixing bowl, whisk together the flour, granulated sugar, lemon zest, baking powder, and salt.

3. Add Colli Siciliani olive oil and lemon juice to the dry ingredients. Mix until a dough forms. If the dough seems too dry, add a bit more olive oil, a teaspoon at a time, until it comes together.

4. Form the dough into small balls or shape them using a cookie cutter and place them on the prepared baking sheet.

5. Flatten each ball slightly with the back of a fork or your palm.

6. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.

7. Remove the biscuits from the oven and let them cool on a wire rack.

8. Once cooled, dust the biscuits with powdered sugar if desired.
