Introduction: Ciambellone, a traditional Italian cake, embodies the essence of simplicity and comfort. This soft, moist cake, enriched with Colli Siciliani olive oil, boasts a delightful aroma and a tender crumb, making it a beloved treat for any occasion.
Ingredients:
3 cups all-purpose flour
1 cup granulated sugar
1 cup milk
3 large eggs
3/4 cup Colli Siciliani olive oil
Zest of 1 lemon
1 tablespoon baking powder
1 teaspoon vanilla extract
A pinch of salt
Powdered sugar (for dusting, optional)
Instructions:
Preheat your oven to 350°F (175°C). Grease and flour a bundt cake pan or a standard cake pan.
In a large mixing bowl, whisk together the eggs and granulated sugar until light and fluffy.
Add the Colli Siciliani olive oil, milk, lemon zest, and vanilla extract. Mix until well combined.
Sift the flour, baking powder, and a pinch of salt into the wet ingredients. Mix gently until the batter is smooth and well incorporated.
Pour the batter into the prepared cake pan, spreading it evenly.
Bake in the preheated oven for about 45-50 minutes or until a toothpick inserted into the center comes out clean.
Once baked, remove the cake from the oven and let it cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
Optionally, dust the cooled ciambellone with powdered sugar before serving.
